STUFFED JACKET POTATOES

I once learned how to make an extremely delicious dinner in a cookery club I used to go to - stuffed jacket potatoes! I make them for my family when none of them can be bothered cooking ;)

ingredients

- 4 large baking potatoes
- 100g of grated cheddar cheese
- 2 spring onions, chopping into thin slices
- 4 tsp of milk

utensils

- 1 mixing bowl
- 1 teaspoon

1. Preheat the oven to 180 degrees celcius.
2. Then half the potatoes, placing them on an oiled baking tray. Place the potatoes in the oven until crispy on the outside.
3. Once finished crisping, scoop out the insides, leaving only the case. Move the insides into your mixing bowl, adding the spring onions, milk and cheese. Mix the ingredients.
4. Replace the potato mixture back into the case, flattening the tops off and sprinkling some cheese on top.
5. Place in the oven between 17-25 minutes.
6. Take out of the oven and serve up with some salad! Enjoy!

PEPPERMINT CREAM CUPCAKES

These are perfect as a toasty snack for the coming cold months! Eat one with your hot chocolate and use up the remaining marshmallows...

Ingredients

Makes: 12 minty cakes
  • 200g self-raising flour
  • 200g caster sugar
  • 200g margarine, melted
  • 3 eggs, beaten
  • 100g unsweetened cocoa powder
  • milk as needed
  • Vanilla Buttercream icing
  • Candy canes
  • Mini marshmallows (optional)

Preparation method

Preheat oven to 150 C / Gas 2. Line tin with paper cases.
Mix together margarine and sugar in a large bowl. Stir in eggs. Sift in flour and cocoa and fold to combine. Stir in a few drops of milk.
Pour into prepared cases and bake in preheated oven for 20-25 minutes. The cakes are ready when a skewer inserted in the middle comes out clean. Allow to cool on wire rack.
Spread an even layer of buttercream on to the cakes – you could stir in  some Vanilla essence first for extra flavour. Place candy canes in a plastic bag and use a rolling pin to crush them to small pieces.  Sprinkle the pieces and mini marshmallows on to the iced cakes.
NOTE: Always ask an adult for help in the kitchen! 

NUTELLA TRUFFLE RECIPE

What chocolate lover doesn't love Nutella? I'm personally a massive fan of this delicious hazelnut spread! One day whilst browsing through nutella recipes, I found this truffle recipe which requires very little ingredients and does not require any baking time. In today's post, I'm going to share this amazing dessert to the whole blogging community!
INGREDIENTS:
- 4 Tablespoons of Nutella
- 6 plain biscuits/cookies of your choice
- 1 cup of Corn Flakes
- 1 Teaspoon of butter
- Cocoa powder or sprinkles for rolling
- Baking paper

1. In a microwave-able bowl, melt Nutella and butter for 1 - 2 minutes either over a stove or using a microwave. Crush the biscuits and add them to the mixture as well as the corn flakes.
2. Let the mixture cool down, when cooled make desired size balls.
3. Roll the balls in cocoa powder or sprinkles then place the balls on a plate with baking paper.
4. Refrigerate for 30 minutes to an hour and there you go! A quick, easy dessert perfect for all occassions.

NOTE: Ask for a parent or guardians assistance when using hot appliances.
